Salad with Tahini dressing

Ingredients

  • 6-8 brussels sprouts
  • 2 medium carrot
  • 1/4 head cauliflower
  • 1 cup cooked chickpeas
  • tomatoes
  • heaped handful spinach

Tahini Dressing

  • 1&1/4 cup water
  • 1 cup raw cashews
  • 1/2 cup lemon juice
  • 1 teaspoon salt
  • 1/4 cup flaxseed oil
  • 1/4 cup nutritional yeast
  • 2 tablespoon tamari or soy sauce
  • 1 teaspoon basil
  • 1/4 cup tahini
  • 1 table spoon honey

Method

  • Chop carrots into 1/4 in slices
  • chop brussels sprouts
  • chop cauliflower
  • Steam the above ingredients
  • add cooked chickpeas tomatoes and spinach and arrange
  • blend all the ingredients for the tahini dressing until smooth and creamy
  • Pour 1/4 cup dressing on arranged salad
  • Enjoy!

Note that if you need a thicker dressing, use hot water. Dressing is enough for several servings and can last in the refrigerator for about 1 week.
