
Ingredients
- 6-8 brussels sprouts
- 2 medium carrot
- 1/4 head cauliflower
- 1 cup cooked chickpeas
- tomatoes
- heaped handful spinach
Tahini Dressing
- 1&1/4 cup water
- 1 cup raw cashews
- 1/2 cup lemon juice
- 1 teaspoon salt
- 1/4 cup flaxseed oil
- 1/4 cup nutritional yeast
- 2 tablespoon tamari or soy sauce
- 1 teaspoon basil
- 1/4 cup tahini
- 1 table spoon honey
Method
- Chop carrots into 1/4 in slices
- chop brussels sprouts
- chop cauliflower
- Steam the above ingredients
- add cooked chickpeas tomatoes and spinach and arrange
- blend all the ingredients for the tahini dressing until smooth and creamy
- Pour 1/4 cup dressing on arranged salad
- Enjoy!
Note that if you need a thicker dressing, use hot water. Dressing is enough for several servings and can last in the refrigerator for about 1 week.
